POTATO SPINACH WAFFLES

GLUTEN FREE, SOY FREE, OIL FREE, REFINED SUGAR FREE ⠀⠀⠀⠀


Ingredients:


6 medium potatoes, peeled and diced

2-3 cups spinach

1 1/2 cup gluten-free flour

3 garlic cloves, minced

1 cup unsweetened almond milk

1 tsp baking powder

1 tsp paprika powder

1 tsp onion powder

1/2 tsp salt

1 flax egg**


Makes 3-4 waffles


**For the flax egg: Add 1 tbsp flaxseed meal and 3 tbsp water to a dish and stir. Let it rest for 5 minutes to thicken. Add to recipes in place of 1 egg.


Instructions:


Firstly, steam the potatoes - add water to medium-sized pot, bring it to a boil and add a steaming basket. Place the potatoes in the basket, cover and steam for a total of 15-20 minutes, until soft. When it’s all cooked and soft, remove and cool completely.⠀⠀


Place the potatoes, spinach and almond milk in a food processor and blend until smooth. Now add the garlic, onion powder, paprika powder, dried oregano and salt, and blend for another 10 seconds.


Transfer the mixture into a medium-sized bowl, add the flax egg, baking powder and the gluten-free flour and give it a good mix until well combined. Let it sit for about 15 minutes.


Preheat the waffle maker. When heated, pour out the batter (use as much as recommended according to the waffle maker manufacturer instructions) and close the machine. Allow to cook for 7-10 minutes until golden and crispy.


Serve it with your favourite salad.
